We rarely see any candid Carrie Underwood photos and I think that’s partly because of the circle she runs in – it’s in Nashville and not in LA. But, here she is. The bikini-clad singer was spotted catching some rays off the California coast and just chillin’ on the sand — and in the water.

Newsflash: The paparazzi don’t really hang out in Nashville, but I kind of wish they would. I mean, with all the drinking, cheating, and hell-raising that goes on over there, it’s bound to make for some great photography for the pap– if they didn’t get shot and lived to tell about it!

Anyone that has followed Carrie Underwood and her career from her days on American Idol knows the singer has slimmed considerably since. Carrie admits that she is well aware of the negative things people say about her weight on and off the Internet, and those comments resulted in her making the decision to slim down.

But look at the recent photograph above (click for full photo). Her arms are withering away!

Carrie Underwood recently shared some of her secrets for staying fit with People magazine: everything in moderation (except maybe cheese) with a lot of cardio. Carrie says when some American Idol viewers were candid in their online postings about her weight, she decided to slim down but didn’t change her diet or fitness routine radically to do so.

“I do work out, but not with a trainer,” she says. “I just do lots of cardio.” And yet, after a whirlwind year (which included lots of awards and a second CD, Carnival Ride), Carrie is in better shape than ever. A longtime vegetarian, she says she watcheswhat she eats but also admits to a weakness for cheese. “I can eat a pound of it,” she says. “It’s a real problem.”

Carrie says she also keeps a snack tucked in her red carpet bags at all times. “I carry [whole-grain] Kashi bars everywhere.”

As most of you already know, the County Music Awards were on TV last night.  Which means there was a lot of singing I had no desire to listen to.  It wasn’t a complete loss though, Carrie Underwood managed to look pretty darn good — and oh yeah, she won a couple things too!  Yeehaw!

Carrie Underwood has been caught holding hands with Chace Crawford, and trying to do it where no one will notice.

“He’s really cute,” Underwood recently told PEOPLE of the 22-year-old Texas-born actor. “I’ve met him and he seems like a really nice guy. He’s got cool hair, he’s a nice height and he just has beautiful blue eyes.”

Carrie’s rep declined to make any comments on the relationship.

Singer Carrie Underwood’s Some Hearts has sold more copies than any other debut album in American Idol history (over 6 million to be exact). In addition to being a Grammy award winner, Carrie has also won PETA’s annual title of World’s Sexiest Female Vegetarian:

Results were released Tuesday by the People for the Ethical Treatment of Animals. Underwood, 24, a Grammy-winning country singer, won the title in 2005. Eubanks, 49, leader of NBC’s “Tonight Show” band, is a newcomer to the winner’s circle.”

I will admit Carrie Underwood was one of my favorite Idol’s on the last season of American Idol.  And no not just because she is cute, because she can actually sing! I think Carrie Underwood has everything it takes to be a big-time and long-lived singer. Carrie is beautiful, she’s smart, and she can sing. Don’t expect her to go Britney anytime soon!
